Banana Cake

2 ¼ cups all purpose flour
1 ½ cups sugar
1 ½ t baking powder
1 t baking soda
½ t salt
1 cup mashed ripe bananas
¾ cup buttermilk
½ cup shortening
1 t vanilla
2 eggs
Preheat oven to 350°.  Grease and lightly flour two 8” cake pans or one 9 x 13 pan.  In a large mixing bowl, stir together flour, sugar, baking powder, baking soda and salt.  Add bananas, buttermilk, shortening and vanilla.  Beat with an electric mixer on low speed till combined.  Add in eggs and beat on medium speed for two minutes.  Pour batter into prepared pans and bake 25-30 minutes or until done in the center.  Cool cakes on wire rack and frost with cream cheese frosting or your favorite frosting. 
Light White Frosting
1 cup milk
6 T flour
4 t vanilla
1 cup butter, softened
1 cup granulated sugar
In a small saucepan, heat over medium low heat the milk and flour, stirring constantly until it becomes a thick paste.  Cool completely.   In a mixing bowl, using an electric mixer, combine the milk paste with 1 cup butter 1 cup granulated sugar and 4 teaspoons of vanilla.  I’ve never used granulated sugar for a frosting, but this is correct. Beat on high for 10 minutes until sugar dissolves. Enjoy!
